Carol Marshall Staffprofile Northumbriauniversity255 CopyCarole is a Senior Lecturer in Human Nutrition and Food Science and teaches on a range of modules across the Department of Applied Sciences.

Carole completed her BSc (Hons) in Human Nutrition at Northumbria University and after graduating with a first class honours degree she became established as a nutritional consultant working in a wide range of fields before specialising three years ago in nutrition for the elderly. She joined the teaching staff of the University in September 2008.

Carole is a Registered Nutritionist with the UK Voluntary Register of Nutritionists and is a member of the Nutrition Society and the Institute of Food Science and Technology. 

She works as part of the University team for Nutrition at Work, which has been set up to deliver targeted, nutrition-related information for employees at their workplace.  

Always very interested in public engagement and more recently in the use of social media in public engagement Carole has been commissioned by a Care Home company to take part in the production of a series of informative videos on nutrition and health which are displayed in a number of venues including YouTube.  

Carole’s current research activities include increasing nutritional awareness in the care of the elderly as she still works part time as a dietary advisor, focusing on delivering staff training and collecting data in residential care homes for the elderly in Scotland, Tyne and Wear and North Yorkshire and more recently in nutritional provision for the very young in nurseries.
